Plus, the non-stick, easy-clean nature of our Penny Pods makes them ideal for baking, freezing, and so much more.
Ingredients (Makes about 12 Mini Muffins)
- 2 ripe bananas
- 1 cup gluten-free oats
-1 tsp baking powder
-1 tbs nut butter
- Optional add-ins: tbs hemp seeds , top each one with a frozen blueberry or sprinkle cinnamon
Step 1: Preheat and Prepare
Preheat your oven to 180°C (350°F). Since our Penny Pods are non-stick, there’s no need for greasing – saving you time and effort.
Step 2: Mash the Bananas
In a medium-sized bowl, mash the ripe bananas until smooth. This will act as the natural sweetener for our muffins, eliminating the need for any added sugar.
Step 3: Blend the Oats
Using a blender or food processor, blend the oats into a fine flour-like consistency. This will give the muffins a smooth and even texture.
Step 4: Mix Ingredients
Combine the mashed bananas with the oat flour and baking powder. Stir until well combined. If desired, mix in any optional add-ins like a sprinkle of cinnamon for added flavour.
Step 5: Fill the Penny Pods
Spoon the batter evenly into each compartment of the Koa & Bo Silicone Penny Pods. The pods are multi-functional and perfectly sized for mini muffins, making them a breeze to use.
Step 6: Bake
Place the filled Penny Pods in the preheated oven and bake for about 12-15 minutes, or until the muffins are set and lightly golden on top. Remember to adjust the baking time slightly based on your oven’s performance.
Step 7: Cool and Enjoy
Allow the mini muffins to cool slightly before popping them out of the pods. Thanks to the Penny Pods’ easy-release design, your muffins will slide out effortlessly, ready to enjoy as a snack or breakfast treat!
The beauty of our Koa & Bo Silicone Penny Pods is their incredible versatility. Use them to make nutritious purees for little ones or fill them with your favourite smoothie mix to create refreshing popsicles.
